Bacon 'n' Egg Salad Sandwiches

Since I'm on afternoons this week, I decided to make Bacon 'n' Egg Salad Sandwiches from the Tasteofhome Contest Winning Annual Recipes 2010 cookbook.


Ingredients
4 bacon strips, cooked and crumbled
1/2 cup shredded cheddar cheese
1/2 cup sour cream
1/3 cup mayonnaise
2 tablespoons minced chives
1/4 teaspoon salt
1/4 teaspoon pepper
10 hard-cooked eggs, chopped
8 lettuce leaves
8 croissants, split

In a large bowl, combine the first seven ingredients. Add the eggs and mix well. Cover and refrigerate for at least 2 hours. Serve on lettuce-lined croissants. Yield: 8 servings.


Modifications and thoughts
I used 5 pieces of bacon instead of 4, because bacon, and I didn't put lettuce on the croissant. It was a pretty decent egg salad. The mayo leant it a bit of sharpness, and the bacon added salt and additional flavour. I enjoyed eating it on a croissant, though I may add lettuce to the next sandwich I make (if it hasn't gone bad) because I think the lettuce will give it a little brightness. All in all, a tasty and easy egg salad, and one I'd make again.
