I tried monthly goals, but I had a hard time coming up with ones I wanted to do, and the situation wasn't ideal. I may try again in the future. At least I know it's an option in case I see a project that size.

Well, one option is colorblocking. Make an afghan of squares and/or rectangles stuck together. Either blocks or wide stripes can work. Just think about how much yarn the pattern uses, then pick that several balls that go together. Or you can take any simple pattern and knit or crochet until you run out of the first ball, then switch to the next color ball. You can make a gradient if you have several shades of the same color, lighter to darker.
You can search patterns by how much yarn they use. If you still have the wrapper, it usually lists the length of yarn, but some are sold by weight instead which is really not helpful for matching yarn to patterns.
