Bacon 'n' Egg Salad Sandwiches
Feb. 1st, 2021 01:59 pmSince I'm on afternoons this week, I decided to make Bacon 'n' Egg Salad Sandwiches from the Tasteofhome Contest Winning Annual Recipes 2010 cookbook.

Modifications and thoughts
I used 5 pieces of bacon instead of 4, because bacon, and I didn't put lettuce on the croissant. It was a pretty decent egg salad. The mayo leant it a bit of sharpness, and the bacon added salt and additional flavour. I enjoyed eating it on a croissant, though I may add lettuce to the next sandwich I make (if it hasn't gone bad) because I think the lettuce will give it a little brightness. All in all, a tasty and easy egg salad, and one I'd make again.
