I'mma get set up to make beignets... this will require (a) a digital thermometer (my deep fryer isn't big enough to make more than 3 or 4 at a time, and that ain't enough; I've got a big pot...), a sifter (for powdered sugar), some really good heat-resistant gloves (my OveGloves aren't fluid-proof, I need some that are silicone and high-dex), and buttermilk, at least according to the Babish. (OTOH sufganiyot we could make as soon as I clean the deep fryer... :)
