This recipe is once again from the Better Homes and Gardens New Cookbook, but I don't have enough spoons for typing out the recipe today. Instead, I found the same recipe online and will link to it.

I chose beef, used only a half tablespoon of hot chili powder (I'm sensitive to heat), one approximately 4 ounce Hungarian Hot Pepper, Monterey Jack cheese, and left out the lettuce and guacamole (I'm not a fan of avocados and the lettuce was too much work). I didn't cook the burritos in the oven, because everything is already cooked and a friend who has eaten far more burritos than me said it was unnecessary. Since I am also only one person and it claims to make 8 burritos (I think I could make 10), I didn't want to cook them all then have them sitting in the fridge all week, so I decided to assemble them as I go. I may cook some in the oven later this week, just to see what happens but after eating them, I agree that I don't think it's really a necessary step.
They are tasty and filling, and I didn't notice anything missing for not having the green things. I do think adding some seasoning directly to the rice, or using other than long grain white rice, might be a good idea. Even mixed in with everything else, the rice was a distinctly bland taste that I wished had just a little flavour, maybe paprika? The lettuce and guacamole would probably add freshness and green to the burritos (is green a flavour?) but the burritos are good without it too. Overall, I probably would make this again, though maybe not on a regular basis.
